Let’s Cook Healthy with Celebrating Home’s Kim Lipe
If you’re like me, eating better is always the goal. However, what usually happens is this. Just as my weight loss goal is within reach without lifting one foot up and half of my body off the scale, a craving hits. I cave and, voila, I’m eating like the end of the world is tomorrow.
However, today, Celebrating Home 2-Star National Executive Kim Lipe (Coffeen, Illinois) has come to the rescue, delivering skinny jean hope to everyone in sight. Her healthy cooking demo going on right now at Rally in our Product Gallery kitchen is leaving all of us in the audience feeling both empowered (we can take those pounds off and triumph!) and hungry. Like me, I bet everyone watching her demo can hardly wait to get home to give these three recipes a try.
Bean Pot Chicken Fajitas
These flavorful fajitas are quick and easy to make, plus, there’s no messy grill to clean because all of the cooking takes place in a versatile Celebrating Home bean pot.
Yields 4 servings
Ingredients:
16 ounce package of fresh chicken breast tenders, boneless and skinless
1 cup low sodium chicken broth
2 tablespoons Celebrating Home Southwest Chipotle dip mix (#05008)
1 medium green pepper, sliced into strips
1 medium red pepper, sliced into strips
1 medium yellow pepper, sliced into strips
1 medium onion, sliced
4 tablespoons Southwest black bean and white corn salsa
4 tablespoons fat-free sour cream
4 tablespoons shredded cheddar cheese
4 Buena Vida low-carb tortilla shells
Directions:
Place chicken tenders, chicken broth and dip mix in bean pot. Microwave 10 minutes.
Add vegetables and continue to microwave 10 more minutes or until vegetables are tender. Serve on a low carb tortilla shell with salsa, cheese and sour cream.

Personal Pan Pizza
Quick and easy….healthy, too! This recipe is perfect for a busy work night.
Yields one serving
Ingredients:
1 pita bread (try Joseph’s flax, oat bran and whole wheat)
2 tablespoons Southwest black bean and white corn salsa
¼ cup onions, chopped
4 ounces cooked 99% fat-free ground turkey breast
1 teaspoon Celebrating Home Peppi Pizza dip mix (#05115)
¼ cup water
¼ cup fat-free mozzarella cheese
Directions:
Preheat oven to 350 degrees.
Brown turkey by placing it with dip mix and water in a Celebrating Home bean pot, then microwave for five minutes.
Layer pita bread with salsa, turkey and onions (or other preferred vegetables). Sprinkle fat-free mozzarella on top.
Place in oven-safe dish and bake for 10-15 minutes until cheese melts.
Tip:
•For variation, swap out the turkey for cooked shredded chicken.

Strawberry Fruit Tarts
These tarts are so tasty that not even a crumb will be left behind!
Yields 6 servings
Ingredients:
6 small Joseph’s Flax, oat bran and whole wheat pita bread
Cinnamon
Stevia extract powder
½ cup liquid egg whites
1 cup fat-free plain greek yogurt (try Fage)
1 teaspoon imitation strawberry extract
1 tablespoon Celebrating Home strawberry pie-ball mix (#05098)
4 tablespoons fat-free cream cheese, plain or strawberry
2 scoops vanilla protein powder
1 tablespoon Stevia extract powder
4 large strawberries, stemmed and sliced
¼ cup Bear Naked fruit and nut granola
Directions:
Tart shells:
Preheat oven to 350 degrees. Spray muffin pan with non-stick cooking spray.
Brush each pita bread with liquid egg whites. Sprinkle with cinnamon and Stevia extract Powder. Press each pita bread in prepared muffin pan.
Bake for 20 minutes or until crispy. Remove from oven and cool.
Filling:
Mix yogurt, strawberry extract, pie-ball mix, cream cheese, protein powder and Stevia extract powder until smooth and creamy.
Spoon mixture into each cooled shell.
Top with strawberries and garnish with granola.
Refrigerate for 30 minutes before serving.
